Have you ever tried Indian sweets? I am a huge fan of most Indian sweets, but am partial to this light and delicious fudge-like treat, called Badam Burfi. It is found all over India and is very popular, especially around the holidays. Normally, the process of making this burfi can be a little complicated. The process starts with making a sugar syrup before adding in almonds that have been blanched, peeled, and ground into a fine flour.
The concept of using almonds as the primary ingredient can be traced back to ancient Ayurvedic texts, which discussed the health benefits of almonds. In Ayurveda, almonds are considered a “sattvic” food, known for their ability to balance the mind and body. Sattvic foods, in general, are foods that are found to increase energy, happiness, calmness, and mental clarity. While I can’t guarantee that you’ll achieve all of those ideals through making this sweet, I can guarantee that you will love the end result and how easy it is to achieve!
To make this two ingredient version, all you will need is sweetened condensed milk and superfine almond flour (I like Bob’s Red Mill). Optional add-ins are a pinch of cardamom powder and a sprinkle of salt for some contrasting flavor, but neither one is necessary!
Step-by-step directions:
Add the condensed milk to a medium bowl and measure out the almond flour that you will need. If using cardamom, sprinkle that into the almond flour now.

Mix the almond flour into the condensed milk in batches, stirring well between each. When all of the almond flour has been incorporated, the consistency should be smooth and you should be able to form a non-sticky ball.


Lightly grease a piece of parchment paper with ghee or butter. Transfer the burfi mixture to the parchment paper and top with another sheet of parchment (or fold the sheet in half with the burfi between).


Use a rolling pin to flatten the burfi to ¼ inch thickness. Top with silver leaf or sprinkles if desired.

Cut into a rectangle and then into diagonal strips. Cut each strip into diamond shapes.

Serve immediately or store in the refrigerator for an extended shelf life!
