Almond Croissants

My usual go-to method of creating almond croissants is to use pre-made croissants, but this version using puff pastry is just as easy and results in a delicious, customizable treat! The perfect addition to your brunch table or as an anytime snack 🙂

The EASIEST Almond Croissants

This version of my bakery favorite involves using puff pastry, which cuts prep time down to just 10 minutes!

Equipment

  • Stand Mixer optional

Ingredients

  • 1 sheet thawed puff pastry
  • 1 1/4 cups almond meal
  • 3/4 cup powdered sugar
  • 1/2 tsp cornstarch
  • 1/4 tsp almond extract
  • 1/4 cup applesauce
  • 6 tbsp softened salted butter
  • 1-2 tbsp milk

Instructions

  • Cut your thawed puff pastry into 9 squares and set aside.
  • Using a stand mixer or handheld mixer, whisk together all of the ingredients (apart from the milk) until smooth.
  • Add 1 tbsp of the mixture to the middle of half of the puff pastry squares, setting aside 1/4 cup of the mixture.
  • Top with a second piece of puff pastry.
  • Press the edges together with your fingers.
  • Dilute the remaining almond paste with 1-2 tbsp milk and spread on top of each pastry.
  • Top with sliced almonds and bake at 400℉ for 15-20 minutes or until golden brown.
  • Sprinkle on powdered sugar before serving.
