Growing up, South Indian dishes like Bisi Bele Bath were a staple in our house. As I got older, I started craving more of my mom’s cooking, but it wasn’t as accessible while living several states away. Now I have my mom teach me more of her recipes whenever she visits, and it is my favorite way to spend time together. This recipe is one that I learned a few visits ago, and using the InstantPot means that it cuts the cook time in half! I can have dinner ready to go in just 30 minutes, with leftovers for days – in case you didn’t know, Indian food gets better over time! Give this a try and let me know what you think!
InstantPot Bisi Bele Bath
A hearty and vegetable-filled rice and lentil dish
Servings: 10
Ingredients
- 3 tbsp oil
- 1 tbsp mustard seeds
- 1 tbsp cumin
- 1/4 cup curry leaves
- Pinch asafetida
- 1 cup toor dal
- 3/4 cup basmati rice
- 1 cup tomato puree
- 5 tbsp sambar powder
- 1/2 cup fresh or desiccated coconut
- 1 cup onion
- 4 small potatoes
- 2 carrots
- 1 cup frozen peas
- 2 cups green beans
- 1-2 tbsp salt or to taste
Instructions
- Cut all of your vegetables into 1 inch pieces and set aside.
- Combine the coconut, tomato puree, and sambar powder in a blender and blend until smooth. Add a little water to loosen up the mixture if needed.
- Press sauté mode on your InstantPot and add the oil.
- When the oil is hot, add the mustard seeds. When they start to pop, add in the cumin, curry leaves, and asafetida.
- Add in the vegetables and sauté for 5 minutes.
- Add the washed dal and rice
- Add the blended masala and 6 cups of water.
- Lock the lid in place and pressure cook for 7 minutes.
- Allow the pressure to naturally release for 20 minutes before releasing the valve.
- Mix in ghee and serve with raita. Enjoy!
