Shortcut Funfetti Cupcakes with PERFECT Buttercream Frosting

This recipe is one that I make over and over again, for nearly every birthday that occurs in our house. Foolproof, easy, and an absolute crowd pleaser, this combination is such a winner that I can guarantee it will get you to stop buying store-bought cupcakes! Feel free to switch out the cake mix for your preferred flavor. I’ve made this with chocolate, yellow, and white cake mixes as well, and they’ve all turned out beautifully every time.

The important part:

Because we are using a shortcut recipe for the cake, you HAVE to pair it with the homemade buttercream. Not only because it is an incredible frosting, but because I firmly believe that the key to successful semi-homemade bakes is to have elements that are made completely from scratch.

Without further ado, here is everything that you’ll need for ultimate cupcake success:

Shortcut Funfetti Cupcakes with Buttercream Frosting

Ingredients

Cupcakes

  • 1 box funfetti cake mix
  • 1/4 cup greek yogurt
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1 cup butter melted

Buttercream Frosting

  • 4 cups powdered sugar
  • 1 cup salted butter softened
  • 2 tsp vanilla extract
  • 1-2 tbsp milk
  • Piping bag + tip optional

Instructions

  • Preheat your oven to 350℉.
  • Mix all of the cupcake ingredients in a stand mixer on medium speed or vigorously by hand for 2-3 minutes.
  • Use an ice cream scoop to distribute the batter between the lined wells of a muffin tin, filling each one halfway.
  • Bake for 19-23 minutes, or until a toothpick inserted into the center comes out clean.
  • Set aside to cool completely.
  • While the cupcakes cool, add the softened butter to the bowl of a stand mixer and use the whisk attachment to beat the butter for 2-3 minutes.
  • Add the vanilla extract and whisk for an additional minute.
  • Add the powdered sugar 1 cup at a time, whisking on low to fully incorporate each cup.
  • Increase speed to medium-high for another 2 minutes, until the frosting is light and airy.
  • Add 1-2 tbsp milk if the consistency feels too dry and mix again.
  • Use a piping bag or offset spatula to decorate your cooled cupcakes and top with sprinkles!
