Have you ever made oat waffles before? Not only are they easy to make, but they are so delicious and incredibly hearty! I love serving this to my family as an alternative to oatmeal on busy mornings, and it’s a breakfast that they ask for over and over again. My go-to toppings are peanut butter and full fat greek yogurt (don’t knock it til you try it!), followed by a drizzle of maple syrup and fresh fruit.
Where can I find oat flour?
Oat flour is incredibly simple to make at home! In fact, I haven’t ever seen it sold in stores, although I’m sure you can find it at specialty grocery stores. All you need to make it yourself is a blender or food processor and rolled, quick cooking, or steel cut oats.
To make oat flour, fill your blender or food processor with the equal amount of oats as the amount of oat flour that the recipe calls for. This amount is different for steel cut oats, as 1 cup of steel cut oats yields 2 cups of oat flour. My preference for whipping up oat flour on an as-needed basis is rolled oats, which I always have on hand. Blend up the oats on medium/medium-high speed for 30 seconds to one minute, or until the oats have been broken down into a fine flour. If there are still whole oats remaining, blend or pulse again until they are ground down. You might need to use a spatula to push down the sides as you blend up the oats!

Oat Waffles

Ingredients
- 1 cup oat flour 1 cup rolled oats blended until flour consistency
- 1 cup all purpose flour
- 1/3 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 tbsp melted butter
- 1 3/4 cups milk
- 1/4 cup yogurt
- 1 egg
- 1 tsp vanilla extract
Instructions
- Whisk together the oat flour, all purpose flour, sugar, baking powder, and salt.
- In a separate bowl, combine the butter, milk, yogurt, egg, and vanilla extract.
- Add the wet ingredients into the dry and whisk until just combined.
- If you’re using them, fold in any mix ins at this stage and set aside for 10 minutes.
- Use in your favorite waffle maker set to medium and enjoy!
