Apple Butter Muffins

- Stand Mixer
Ingredients
- 3 cups white whole wheat flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup salted butter softened
- 3/4 cup granulated sugar
- 2 cups apple butter room temperature
- 1/2 cup milk room temperature
- 1/2 cup chopped pecans
- Turbinado sugar optional
Instructions
- Preheat oven to 350℉.
- Use a stand mixer fitted with the paddle attachment to beat the butter and sugar together until the mixture is light and fluffy (about 3 minutes).
- Add the apple butter and milk and mix.
- In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- Add the dry ingredients to the mixing bowl and mix until just combined. The mixture will be thick!
- Use a spatula to gently fold in the pecans.
- Using an ice cream scoop, distribute the batter between the wells of a lined muffin pan.
- Top with a sprinkle of turbinado sugar if desired and then bake for 22-25 minutes or until a toothpick inserted into the center comes out clean. Enjoy!
