Apple Butter Muffins

Ingredients

  • 3 cups white whole wheat flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup salted butter softened
  • 3/4 cup granulated sugar
  • 2 cups apple butter room temperature
  • 1/2 cup milk room temperature
  • 1/2 cup chopped pecans
  • Turbinado sugar optional

Instructions

  • Preheat oven to 350℉.
  • Use a stand mixer fitted with the paddle attachment to beat the butter and sugar together until the mixture is light and fluffy (about 3 minutes). 
  • Add the apple butter and milk and mix.
  • In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  • Add the dry ingredients to the mixing bowl and mix until just combined. The mixture will be thick!
  • Use a spatula to gently fold in the pecans. 
  • Using an ice cream scoop, distribute the batter between the wells of a lined muffin pan. 
  • Top with a sprinkle of turbinado sugar if desired and then bake for 22-25 minutes or until a toothpick inserted into the center comes out clean. Enjoy!
