Apple Cinnamon Scones

Ingredients
- 2 1/4 cups all purpose flour
- 1/4 cup brown sugar
- 2 tbsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 cup cold salted butter
- 1 cup peeled + cubed apple
- 3/4 cup buttermilk
- 2 tbsp turbinado sugar optional, but recommended!
Icing
- 1 cup powdered sugar
- 1-2 tbsp apple cider
Instructions
- Preheat your oven to 375F.
- In a large bowl, whisk together the flour, baking powder, brown sugar, salt, and cinnamon.
- Grate in your cold butter and use your hands to incorporate it into the flour mixture.
- Add the cubed apple and use a spatula to mix until well distributed.
- Add in the buttermilk and mix again, using your hands to fold everything together.
- Transfer your dough to a lined baking sheet and press into a 8” x 7” rectangle.
- Cut into 9 squares/rectangles and cut each one in half diagonally.
- Spread your scones about 1/2-1” apart on your baking sheet and sprinkle with turbinado sugar.
- Bake for 10 minutes. Allow to cool on the baking sheet for another 10 minutes before transferring to a rack to cool completely.
- While the scones cool, mix the powdered sugar and apple cider together to form your icing.
- Drizzle the icing over the cooled scones and enjoy!
