Apple Cinnamon Scones

Ingredients

  • 2 1/4 cups all purpose flour
  • 1/4 cup brown sugar
  • 2 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup cold salted butter
  • 1 cup peeled + cubed apple
  • 3/4 cup buttermilk
  • 2 tbsp turbinado sugar optional, but recommended!

Icing

  • 1 cup powdered sugar
  • 1-2 tbsp apple cider

Instructions

  • Preheat your oven to 375F.
  • In a large bowl, whisk together the flour, baking powder, brown sugar, salt, and cinnamon.
  • Grate in your cold butter and use your hands to incorporate it into the flour mixture.
  • Add the cubed apple and use a spatula to mix until well distributed.
  • Add in the buttermilk and mix again, using your hands to fold everything together.
  • Transfer your dough to a lined baking sheet and press into a 8” x 7” rectangle.
  • Cut into 9 squares/rectangles and cut each one in half diagonally.
  • Spread your scones about 1/2-1” apart on your baking sheet and sprinkle with turbinado sugar.
  • Bake for 10 minutes. Allow to cool on the baking sheet for another 10 minutes before transferring to a rack to cool completely.
  • While the scones cool, mix the powdered sugar and apple cider together to form your icing.
  • Drizzle the icing over the cooled scones and enjoy!
