The first time I tried this appetizer was at a ladies night that I hosted at our house. One of my friends brought this over and I was absolutely hooked! This is such an easy appetizer to make and will be the highlight of any gathering. The blueberry compote recipe that I used is from food network, but feel free to use any one of your choosing!
Blueberry Compote Goat Cheese with Lemon Cookies
Servings: 8
Ingredients
- 2 cups frozen blueberries
- 3 tbsp water
- 1/4 cup granulated sugar
- 2 tsp lemon juice
For serving:
- 1 block blueberry goat cheese
- 1 box thin lemon cookies
Instructions
- Combine 1 cup of the blueberries, water, sugar, and lemon juice in a saucepan.
- Cook for 10 minutes, stirring frequently.
- Add the remaining 1 cup of blueberries and cook for another 8-10 minutes, until thickened.
- When serving, place the goat cheese on your serving tray and top with the warm compote.
- Add thin lemon cookies to spread the goat cheese and compote mixture on and enjoy!!
