Trust me when I say that you absolutely HAVE to make these decadent and delicious brownie cookies as soon as possible. Crispy on the outside, chewy on the inside, and stuffed with chocolate chips- what’s not to love?!
Brownie Cookies

Ingredients
- 10 tbsp salted butter
- 1/2 cup semi sweet chocolate chips
- 2 eggs
- 1 cup sugar
- 2 tsp vanilla
- 3/4 cup all purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup mini chocolate chips
- Powdered sugar for dusting
Instructions
- In a saucepan over medium low heat, melt your butter and then add in the 1/2 cup of chocolate chips. Mix until everything is melted and we’ll incorporated.
- Use the paddle attachment of your stand mixer to mix together the eggs and sugar. Mix in medium for 3-4 minutes or until the mixture is pale and fluffy.
- With the mixer on low, add in the butter and chocolate mixture and the vanilla.
- In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
- Add the dry ingredients to the mixing bowl, mixing until just incorporated.
- Place the bowl in the freezer to thicken the dough, about 30-45 minutes.
- Preheat your oven to 350°F.
- Use a cookie scoop to create balls of dough and place on your lined baking sheet about 1” apart.
- Bake for 10 minutes and allow to cool on the pan for at least 20 minutes before transferring to a rack.
- Dust with powdered sugar and enjoy!
