Ingredients
- 1 24oz jar Rao's Homemade Marinara Sauce
- 5 cups vegetable broth
- 1 onion finely diced
- 3 cloves garlic minced
- 1 package Beyond Meat Ground
- 1 15oz can black beans drained and rinsed
- 1 tsp salt or to taste
- 1/2 tsp ground pepper
- 3 tsp taco seasoning
- 16 oz cavatappi pasta or other short pasta
- 2 cups cheddar jack cheese
Instructions
- Set your InstantPot to sauté mode and add in 2 tbsp of oil when hot.
- Sauté the onion and garlic until the onion is translucent.
- Add in the vegan meat and sauté until cooked through (about 5 minutes).
- Add the sauce, broth, salt, pepper, taco seasoning, pasta, and beans.
- Mix well and then pressure cook for 5 minutes. Instant release when finished.
- Mix in the cheese and serve with garlic bread. Enjoy!
