Ingredients

  • 1 24oz jar Rao's Homemade Marinara Sauce
  • 5 cups vegetable broth
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 1 package Beyond Meat Ground
  • 1 15oz can black beans drained and rinsed
  • 1 tsp salt or to taste
  • 1/2 tsp ground pepper
  • 3 tsp taco seasoning
  • 16 oz cavatappi pasta or other short pasta
  • 2 cups cheddar jack cheese

Instructions

  • Set your InstantPot to sauté mode and add in 2 tbsp of oil when hot. 
  • Sauté the onion and garlic until the onion is translucent. 
  • Add in the vegan meat and sauté until cooked through (about 5 minutes).
  • Add the sauce, broth, salt, pepper, taco seasoning, pasta, and beans.
  • Mix well and then pressure cook for 5 minutes. Instant release when finished.
  • Mix in the cheese and serve with garlic bread. Enjoy!
