Lemon Rice with Peas
This easy rice dish comes together in 10 minutes and couldn’t be easier to make!
Servings: 5
Ingredients
- 2 cups cooked cooled rice (I used a blend of basmati, brown basmati, and quinoa)
- 1 cup frozen peas
- 1 tsp mustard seeds
- 1 tsp whole cumin
- 1/2 tsp turmeric
- Pinch asafetida
- 6-8 curry leaves
- 1-2 tbsp freshly squeezed lemon juice
- 1/4 cup raw cashew pieces
- Salt to taste I used 2 tsp
- 1-2 tbsp chopped cilantro optional
Instructions
- To a medium pan, sauté cashews in 1 tsp ghee until golden brown. Set aside.
- Add oil, mustard seeds, cumin, turmeric, and asafetida to the pan and heat until the seeds start to splatter.
- Add curry leaves and stir.
- Add peas and salt and cook until tender.
- Turn off the heat and add rice and lemon juice.
- Stir well to combine before mixing in the cashews and cilantro.
