Lemon Rice with Peas

This easy rice dish comes together in 10 minutes and couldn’t be easier to make!

Ingredients

  • 2 cups cooked cooled rice (I used a blend of basmati, brown basmati, and quinoa)
  • 1 cup frozen peas
  • 1 tsp mustard seeds
  • 1 tsp whole cumin
  • 1/2 tsp turmeric
  • Pinch asafetida
  • 6-8 curry leaves
  • 1-2 tbsp freshly squeezed lemon juice
  • 1/4 cup raw cashew pieces
  • Salt to taste I used 2 tsp
  • 1-2 tbsp chopped cilantro optional

Instructions

  • To a medium pan, sautĂ© cashews in 1 tsp ghee until golden brown. Set aside.
  • Add oil, mustard seeds, cumin, turmeric, and asafetida to the pan and heat until the seeds start to splatter.
  • Add curry leaves and stir.
  • Add peas and salt and cook until tender.
  • Turn off the heat and add rice and lemon juice.
  • Stir well to combine before mixing in the cashews and cilantro.
