Lemon Rice with Peas
This easy rice dish comes together in 10 minutes and couldn’t be easier to make!

- 2 cups cooked cooled rice (I used a blend of basmati, brown basmati, and quinoa)
- 1 cup frozen peas
- 1 tsp mustard seeds
- 1 tsp whole cumin
- 1/2 tsp turmeric
- Pinch asafetida
- 6-8 curry leaves
- 1-2 tbsp freshly squeezed lemon juice
- 1/4 cup raw cashew pieces
- Salt to taste I used 2 tsp
- 1-2 tbsp chopped cilantro optional
To a medium pan, sauté cashews in 1 tsp ghee until golden brown. Set aside.
Add oil, mustard seeds, cumin, turmeric, and asafetida to the pan and heat until the seeds start to splatter.
Add curry leaves and stir.
Add peas and salt and cook until tender.
Turn off the heat and add rice and lemon juice.
Stir well to combine before mixing in the cashews and cilantro.
