This is my new favorite breakfast! With just a few minutes of prep time the night before, you can enjoy this beautiful, flavorful, wonderfully textured parfait that is incredibly satisfying and packed with protein. Switch out the fruit for whatever you have on hand or to your preference. I’ve used bananas and berries before, but mango is definitely my preferred addition!
Mango Chia Pudding Parfait
Servings: 6
Ingredients
- 3/4 cup chia seeds
- 3 cups almond or coconut milk
- 1 tsp vanilla
- 2 tbsp agave syrup
- 1 large mango cubed
- 1 tub Greek yogurt
- Optional: agave for additional sweetness
Instructions
- The night before, prep your chia pudding by mixing together the chia seeds, milk, vanilla, and agave in a container and setting in the fridge overnight.
- The next morning, assemble your parfait by alternating 1-2 tablespoons each of mango, chia pudding, and Greek yogurt, finishing with a layer of mango at the very top. Store in the fridge to enjoy over the week or eat immediately!
