Mango Chia Pudding Parfait

Ingredients

  • 3/4 cup chia seeds
  • 3 cups almond or coconut milk
  • 1 tsp vanilla
  • 2 tbsp agave syrup
  • 1 large mango cubed
  • 1 tub Greek yogurt
  • Optional: agave for additional sweetness

Instructions

  • The night before, prep your chia pudding by mixing together the chia seeds, milk, vanilla, and agave in a container and setting in the fridge overnight.
  • The next morning, assemble your parfait by alternating 1-2 tablespoons each of mango, chia pudding, and Greek yogurt, finishing with a layer of mango at the very top. Store in the fridge to enjoy over the week or eat immediately!
