Stuffed with sprinkles (“quins”) and white chocolate chips, these cookies are a celebration in every bite! I made this a one bowl recipe for added ease and speed, which also means less to clean up when you’re done baking. This small batch recipe yields about 16 cookies and is such a fun addition to a dessert table or birthday celebration!
Step by step instructions:
In the bowl of a stand mixer, mix the butter and sugars on medium speed until light and fluffy (about 3 minutes).
Add in the egg and vanilla and mix again for 2-3 minutes.
Sprinkle the flour over the surface of the mixture, followed by the baking soda and salt.
Mix on low until just combined and then switch to a spatula to fold in the chocolate chips and sprinkles.
Use a cookie scoop to add the dough to a parchment lined baking sheet and freeze for 20-30 minutes.
While the cookies are in the freezer, preheat your oven to 375°F.
Bake for 8-10 minutes, or until the cookies are golden brown around the edges but still look undercooked in the middle. They will finish baking on the tray after being removed from the oven!
Allow to cool on the tray for 30 minutes before transferring to a wire rack to finish cooling.
