Funfetti Cookies

Ingredients

  • ½ cup unsalted butter 1 stick
  • cup brown sugar
  • cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ⅛ cups all purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup white chocolate chips
  • ½ cup rainbow quins or other sprinkles of your choice

Instructions

  • In the bowl of a stand mixer, mix the butter and sugars on medium speed until light and fluffy (about 3 minutes).
  • Add in the egg and vanilla and mix again for 2-3 minutes.
  • Sprinkle the flour over the surface of the mixture, followed by the baking soda and salt.
  • Mix on low until just combined and then switch to a spatula to fold in the chocolate chips and sprinkles.
  • Use a cookie scoop to add the dough to a parchment lined baking sheet and freeze for 20-30 minutes.
  • While the cookies are in the freezer, preheat your oven to 375°F.
  • Bake for 8-10 minutes, or until the cookies are golden brown around the edges but still look undercooked in the middle. They will finish baking on the tray after being removed from the oven!
  • Allow to cool on the tray for 30 minutes before transferring to a wire rack to finish cooling.
