This is the best treat to make all year round, but especially when it’s chilly outside and you want to enjoy a warm slice of banana bread alongside a latte or tea. The fact that this can be made in one bowl makes it that much more enjoyable to make, and this loaf turns out well every single time!

Raspberry & Apricot Cornmeal Muffins
One Bowl Banana Bread
Servings: 1 loaf
Ingredients
- ⅓ cup avocado oil
- ½ cup maple syrup
- 1 egg
- ¼ cup plain greek yogurt
- 2-3 mashed bananas
- ¼ cup milk
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 1 cup wheat flour
- ¾ cup all purpose flour
- ⅓ cup chopped walnuts
- ⅓ cup mini chocolate chips
Instructions
- Preheat your oven to 325°F and grease a 9×5 inch loaf pan
- In a large bowl, whisk the maple syrup and oil together.
- Add the egg, yogurt, and milk and mix again until fully combined.
- Whisk in the mashed bananas and vanilla extract.
- Sprinkle in the baking soda, salt, and cinnamon and mix again.
- Add both flours and use a spatula to fold everything together.
- Gently fold in the nuts and chocolate chips before transferring the batter to your loaf pan.
- Bake for 1 hour and 5 min to 1 hour and 10 min, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 20 minutes before turning onto a rack to cool completely.
Notes
To make muffins, line a muffin tin before using an ice cream scoop to divide the batter evenly between the 12 wells. Bake for 23-28 minutes.
