One Bowl Banana Bread

Ingredients

  • cup avocado oil
  • ½ cup maple syrup
  • 1 egg
  • ¼ cup plain greek yogurt
  • 2-3 mashed bananas
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 cup wheat flour
  • ¾ cup all purpose flour
  • cup chopped walnuts
  • cup mini chocolate chips

Instructions

  • Preheat your oven to 325°F and grease a 9x5 inch loaf pan
  • In a large bowl, whisk the maple syrup and oil together.
  • Add the egg, yogurt, and milk and mix again until fully combined.
  • Whisk in the mashed bananas and vanilla extract.
  • Sprinkle in the baking soda, salt, and cinnamon and mix again.
  • Add both flours and use a spatula to fold everything together.
  • Gently fold in the nuts and chocolate chips before transferring the batter to your loaf pan.
  • Bake for 1 hour and 5 min to 1 hour and 10 min, or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 20 minutes before turning onto a rack to cool completely.

Notes

To make muffins, line a muffin tin before using an ice cream scoop to divide the batter evenly between the 12 wells. Bake for 23-28 minutes.
