This amazing rice dish is an easy go-to meal in our house, and I love serving it with a side of cucumber, tomato, and onion raita.
Peas & Pepper Bath
Servings: 4
Ingredients
- 2 cups cooked and cooled basmati rice I used a blend of basmati, brown basmati, and quinoa
- 1.5 tsp black mustard seeds
- 1.5 tsp whole cumin
- 1 pinch asafetida
- 1 tsp turmeric
- 1/3 cup roasted cashews
- 1 cup frozen peas
- 1 cup chopped red or green bell pepper
- 1 seeded diced jalapeño
- 1/4 cup desiccated coconut
- 2 tbsp sambar powder
- 2 tbsp lemon juice
- Salt to taste I used about 2 tsp
Instructions
- Heat mustard seeds and cumin in 2-3 tbsp oil until the mustard seeds start to splatter.
- Add asafetida and turmeric and stir.
- Add bell peppers and sauté until half cooked.
- Add peas and salt and let the mixture cook on medium heat until mostly cooked through.
- Add coconut and sambar powder and mix, sautéing for a few more minutes.
- Turn off the heat and add lemon juice.
- Add rice and cashew pieces.
- Mix well to combine.
- Serve warm with raita or plain yogurt. Easy, right?
