Ingredients

cooked and cooled basmati rice
I used a blend of basmati, brown basmati, and quinoa

black mustard seeds

asafetida

turmeric

roasted cashews

frozen peas

chopped red or green bell pepper

seeded diced jalapeño

desiccated coconut

sambar powder

tbsp
lemon juice
Salt to taste
I used about 2 tsp
Instructions
Heat mustard seeds and cumin in 2-3 tbsp oil until the mustard seeds start to splatter.
Add asafetida and turmeric and stir.
Add bell peppers and sauté until half cooked.
Add peas and salt and let the mixture cook on medium heat until mostly cooked through.
Add coconut and sambar powder and mix, sautéing for a few more minutes.
Turn off the heat and add lemon juice.
Add rice and cashew pieces.
Mix well to combine.
Serve warm with raita or plain yogurt. Easy, right?
