Indulge in the rich, fudgy goodness of brownies made with the delightful crunch of chocolate cookies. I love brownies in all forms, but my favorite method is this one, where I add a layer of Oreos to the bottom of the pan before adding in the brownie batter. The best thing about this recipe is that it is made in just one pot! You just need a few simple ingredients and a little bit of patience for the brownies to fully set when the baking time is over. The result? Luscious brownies filled with two types of chocolate, with a crackly top and a crisp bite of chocolate cookie at the end. So delicious and SO satisfying! Baking tips:
- When it’s time to whisk in the eggs, crack them into a separate, smaller bowl and whisk constantly with one hand while you pour in the eggs with the other. Because we are working with a hot base, you don’t want the eggs to scramble when you first add them in! This can be a little tricky at first, but you’ll get the hang of it in no time.
- Use a spatula to fold in your dry ingredients. A whisk won’t work nearly as well with the thick and chocolate chip-filled batter!
- Be patient, it’s worth it! These brownies need 30 minutes of setting time after they come out of the oven. Any less and the centers won’t be fully fudgy, and no one likes overly gooey brownies! The only exception to this is if you would like to serve them a la mode and want hot centers for the ice cream to melt into.

One Bowl Cookies & Cream Brownies
Ingredients
- 10 tbsp salted butter
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup semi sweet chocolate chips
- 1/2 tsp salt
- 3/4 cup all purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup white chocolate chips
- 20 Oreos 16 whole and 4 halved to better fit the pan
Instructions
- Preheat your oven to 350℉.
- In a medium pot, melt the butter and whisk in the sugar until well combined.
- Turn off the heat and add the eggs one at a time, whisking constantly.
- Add in the vanilla and chocolate chips, whisking again until melted.
- Fold in the salt, all purpose flour, and cocoa powder just until combined.
- Fold in the white chocolate chips and set aside.
- Line a 9×9 pan and layer the Oreos along the bottom.
- Top with the brownie batter and spread into an even layer over the cookies.
- Bake for 30 minutes.
- Cool for an additional 30 minutes before slicing!
