Apple Cinnamon Granola

Ingredients

  • 2 2/3 cup rolled oats
  • 1/2 cup wheat bran
  • 1/3 cup pumpkin seeds
  • 1/3 cup sliced almonds
  • 1/3 cup chopped pecans
  • 1/3 cup sunflower seeds
  • 1/2 tsp salt
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1/3 cup vegetable oil
  • 1 large or 2 small apples finely diced

Instructions

  • Preheat your oven to 325°F.
  • First combine the oats, wheat bran, nuts, and seeds in a bowl and mix together.
  • Add in the diced apple and mix again until well combined.
  • In a smaller bowl, whisk together the maple syrup, oil, brown sugar, cinnamon, vanilla, and salt until well combined.
  • Pour the wet ingredients into the dry mixture and use a spatula to thoroughly combine.
  • Transfer the mixture to a lined baking sheet and spread into an even layer.
  • Bake for 30-40 minutes, gently tossing every 10 minutes. Allow to cool for 30 minutes before transferring to an airtight jar or ziploc bag for storage.

Notes

  • The moisture from the fresh apples causes the granola to crisp up a little slower than usual, which is why the bake time is a little longer than usual. 
  • If you would like to make this without the apple, reduce your bake time to 20 minutes and mix halfway through the baking time.
