Homemade Granola

- 2 2/3 cup rolled oats
- 1/2 cup flax seed meal
- 1/3 heaping cup pumpkin seeds
- 1/3 heaping cup sliced almonds
- 1/3 cup chopped walnuts
- 1/3 cup chopped cashews
- 1/2 tsp salt
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 2 tbsp + 2 tsp brown sugar
- 1 tsp vanilla extract
- 1/3 cup vegetable oil
Combine oats, flax seed meal, pumpkin seeds, and nuts in a large bowl and set aside.
In a sauce pan, bring salt, brown sugar, maple syrup, vegetable oil, and cinnamon to a boil.
Remove from heat and add vanilla. Pour the boiled mixture into the dry ingredients and mix well to combine.
Transfer to a foil-lined baking sheet and spread into an even layer.
Bake for 20 min at 325°F, mixing halfway.
Let cool completely before breaking it up with your hands and transferring to an airtight container.
