Homemade Granola

Ingredients

  • 2 2/3 cup rolled oats
  • 1/2 cup flax seed meal
  • 1/3 heaping cup pumpkin seeds
  • 1/3 heaping cup sliced almonds
  • 1/3 cup chopped walnuts
  • 1/3 cup chopped cashews
  • 1/2 tsp salt
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 2 tbsp + 2 tsp brown sugar
  • 1 tsp vanilla extract
  • 1/3 cup vegetable oil

Instructions

  • Combine oats, flax seed meal, pumpkin seeds, and nuts in a large bowl and set aside.
  • In a sauce pan, bring salt, brown sugar, maple syrup, vegetable oil, and cinnamon to a boil.
  • Remove from heat and add vanilla. Pour the boiled mixture into the dry ingredients and mix well to combine.
  • Transfer to a foil-lined baking sheet and spread into an even layer.
  • Bake for 20 min at 325°F, mixing halfway.
  • Let cool completely before breaking it up with your hands and transferring to an airtight container.
